How to Make Spiced Honey Pumpkin

As fall quickly approaches, pumpkins are readily available and a tasty, colorful addition to any meal. Pumpkins are loaded with an important antioxidant, beta-carotene. They also can put an interesting spin on your fall menu. Serve with any meat that would be complimented by a sweet and spicy side dish.

Instructions

Things You'll Need:

  • 4 pound pumpkin
  • 4 cups water
  • 1/2 tsp salt
  • 3 tblsp butter
  • 3 tblsp honey
  • 1/2 tsp allspice
  1. Step 1

    Cut pumpkin into quarters with a sharp knife removing all seeds and stringy portions, wash sections well.

  2. Step 2

    In large saucepan, heat pumpkin sections, water and salt until boiling; lower temperature, cover and simmer for 20-25 minutes until fork-tender.

  3. Step 3

    Drain water from pan and scoop flesh away from peel and place cooked pumpkin back into same pan.

  4. Step 4

    Using potato masher or a slotted spoon, mash well and drain liquid.

  5. Step 5

    Over low heat, cook pumpkin for approximately 3 minutes while stirring occasionally to cook off any remaining liquid. Stir in remaining ingredients, mix well - place in a serving bowl and garnish with a slab of butter and a couple sprinkles of dried parsley. Serve while warm.
