How to Use a Commercial Can Opener
A commercial can opener is an essential piece of equipment in a modern restaurant. Like any restaurant tool, safety rules must be observed to use the can opener without injury. Always follow directions completely for both food and personal safety at all times.

Sanitize all surfaces where food may touch. Use a designated cloth and the correct strength sanitizer water to clean the table top, can top and opener blade before opening the can of food. Make sure that no part of your clothes or jewelry are hanging anywhere near the opener blade or gears.

Lift the handle of the opener until it is in the fully upright position. Pull the entire opener up in the guide loop until the blade is positioned at least two inches higher than the top of the can. Slide the can until the edge is directly against the shaft of the opener and centered under the blade.

Swiftly push the opener down onto the can, making sure that the blade pierces the can completely. Push the handle down to the horizontal position, locking the can in place. Use two hands if necessary to rotate the handle until the blade has cut through the top all the way around the can.

Lift the blade back into the vertical position. Remove the can from the cutting area, taking care not to spill the contents. Discard the can lid very carefully, as the edges will be razor sharp. Use sanitizer cloth and water to clean the blade and opener area.

Tips & Warnings
After pouring out the contents of the can, put the lid back into the can and crush the can opening. This prevents accidental cuts from lids slicing through trash bags.
Do not skip steps in sanitizing your can opener blade. This area is one of the most frequent villains for mold growth in restaurants and is often the first place health inspectors check.
