FOUR MAST SCHOONER
FOUR MAST SCHOONER

This is an old family recipe handed down over time, it may go by other names. We make double batches and freeze em in zip lock bags.

Difficulty: Easy
Instructions

Things You'll Need:

  • 2 tablespoons cooking oil
  • large 5 quart pan
  • 5 green peppers
  • 2 large onions
  • 1 package celery
  • 2 pounds hamburg
  • 1 26 oz can spaghetti sauce
  • 2 six ounce cans tomato paste
  • garlic
  • 1 teaspoon oregano
  • 4 - 6 shakes crushed red pepper
  • water
  1. Step 1
    Preparing the Hamburger

    Preparing the Hamburger

Cook the two pounds of hamburg, drain and set aside. (I have used ground turkey in place of hamburg, but it really does change the taste, and we prefer hamburg)

  2. Step 2

While the hamburg is cooking, remove seeds from 5 green peppers and chop up. Chop up the celery and onions as well. Remember to stir the meat now and then.

  3. Step 3

Place cooking oil in large pot and heat over med heat. Add chopped peppers, celery, and onions. Cook, stirring, for about 15 minutes.Add the cooked hamburg to the pot along with all the other remaining ingredients. Add water as needed, you want this to be thick, but not too thick. Bring to just a boil, cover and turn down heat and simmer for about an hour.

  4. Step 4

Once cooked, serve over slices of toast or scoop into hot dog buns or hamburger buns. Shake on some crushed red pepper and enjoy. The vegetables in this dish just blend so well together.

  5. Step 5

This does not last long, so we make a double batch, using two large pots, and freeze it in smaller portions for throwing in the microwave when in a hurry. I use tomato paste in this, my dad replaces the tomato paste for two small jars of pizza sauce, and my brother uses a largew can of crushed tomatos in place of the paste. It's really up to you.

  6. Step 6

Now shake on your crushed red pepper - this recipe goes way back to my dads father, and my great great Uncle also made this, so it has been in our family for some time. We have a saying, how many shakes of red pepper you apply once its in your plate is what seperates the boys from the men. If really hot food is not for you, then just leave out the crushed red pepper.

Tips & Warnings
  • The important thing when making this is that you want it thick, but not too thick, and not too thin. So be careful when adding water. You may only need to add a little.
  • The only warning would be in regards to the crushed red pepper. My dad adds so much you can almost not eat the stuff. That is why I put down only 4 to 6 shakes in the list, my dad would probably put 12 shakes.
