How to Make Simple Chicken and White Bean Chili

I never make chili the same way twice. Although I tend to follow most other types of recipes to the letter, with chili it's fun to experiment with different combinations of ingredients. Traditional chili usually includes meat and/or beans with the same basic spices, and sometimes vegetables, thrown in. Recently I was looking for a recipe that would use the canned chicken I had on hand, so I found a chicken chili recipe and modified it to my tastes. You'll find that there are endless flavor possibilities that you can create with this chili recipe. It's quick, easy, and delicious!

Instructions

Things You'll Need:

  • 2 Tbsp olive oil
  • 1 green bell pepper
  • 1 large onion
  • 4 large cloves garlic, or 1 tsp garlic powder
  • 1 Tbsp ground cumin
  • 1 tsp dried oregano
  • ½ tsp anise seed
  • ½ tsp dried red (cayenne) pepper
  • 2 large (10-12 oz.) cans cooked chicken breast
  • 2 15-oz. cans Cannellini or Great Northern beans
  • 1 can diced tomatoes with green chilies
  • 1 cup chicken broth or vegetable broth (add more as needed)
  • 1-2 tsp hot sauce (optional)
  1. Step 1

    Chop the onion, green pepper, and garlic (if using garlic cloves). Drain the canned chicken breast and set it aside.

  2. Step 2

    In a large pot, sauté the onions, pepper, garlic, cumin, oregano, anise seed and dried red pepper in olive oil for 5 minutes.

  3. Step 3

    Add the beans (with their liquid), chicken, broth, and diced tomatoes with chilies. Simmer until the chicken is tender, about 10 minutes. You can adjust the seasoning as it simmers, making it as mild or as spicy as you desire.

Tips & Warnings
  • May be topped with shredded cheese, fresh chopped cilantro, or sour cream, if desired.
  • Makes approximately 8 servings.
