Things You'll Need:
- 2 Tbsp olive oil
- 1 green bell pepper
- 1 large onion
- 4 large cloves garlic, or 1 tsp garlic powder
- 1 Tbsp ground cumin
- 1 tsp dried oregano
- ½ tsp anise seed
- ½ tsp dried red (cayenne) pepper
- 2 large (10-12 oz.) cans cooked chicken breast
- 2 15-oz. cans Cannellini or Great Northern beans
- 1 can diced tomatoes with green chilies
- 1 cup chicken broth or vegetable broth (add more as needed)
- 1-2 tsp hot sauce (optional)

Step 1
Chop the onion, green pepper, and garlic (if using garlic cloves). Drain the canned chicken breast and set it aside.

In a large pot, sauté the onions, pepper, garlic, cumin, oregano, anise seed and dried red pepper in olive oil for 5 minutes.

Step 3
Add the beans (with their liquid), chicken, broth, and diced tomatoes with chilies. Simmer until the chicken is tender, about 10 minutes. You can adjust the seasoning as it simmers, making it as mild or as spicy as you desire.
