How to Make Stuffed Roasted Chicken

Try this stuffed roasted chicken for a meal that is great for any occasion. Or just as a main entree.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 3 to 4 lb chicken
  • 1 tbsp lemon juice
  • 3 tbsp butter
  • 3 tbsp parsley
  • 1 egg whipped
  • 1/3 cup chicken broth
  • 1 sm diced onion
  • 1 tsp garlic
  • 1 1/2 cup cooked rice
  • 1/4 cups nuts
  • 1 tbsp olive oil
  • 1 tbsp tomato paste
  • salt and pepper to taste
  1. Step 1

    In cold water wash your chicken inside and out. Pat dry and spread lemon juice inside.

  2. Step 2

    In a medium skillet, saute the butter, onoin, and the garlic until light brown, about 2 minutes.

  3. Step 3

    Pour into a medium mixing bowl. Add your egg, chicken broth, parsley, nuts, rice, and tomato paste. Blend well and stuff into the chicken. Close the opening.

  4. Step 4

    Preheat oven to 350. Place chicken in a roasting pan and add 1/2 cup of water to the pan. Rub outside of chicken with salt and pepper. Let roast for 1 hour and 30 minutes. Cook until no pink.

  5. Step 5

    During cooking baste with pan juices. Add more water if needed.

  6. Step 6

    Serve and enjoy.

    Note...if you like feel free to change up the spices. There are many different ones that can change the taste of the roasted chicken. Also great with or without nuts.
