      Gather together the ingredients for the
      Kentucky style fried chicken.
      A chicken that has been cut up into serving size pieces.
      2 envelopes of Italian dressing mix
      3 tablespoons of flour
      1 teaspoon salt
      1/4 cup of fresh lemon juice
      2 tablespoons butter
      Salad oil for frying
      Pancake mix
      1 teaspoon paprika
      1/2 teaspoon sage
      1/2 teaspoon pepper
      1 cup of milk
      frying pan
      platter

      Wash and dry chicken. Drain on paper towel. Make a paste out of the Italian salad dressing mix, flour, salt, lemon juice, butter. Dip the pieces of chicken in the mix until they are thoroughly coated on both sides. Place the coated chicken in a covered platter. Place in the refrigerator overnight.

      To cook, heat the oil in a large frying pan. The oil should be about 1 1/2 inch deep. Combine the pancake mix, paprika, sage, and pepper. Dip the chicken pieces in the milk first and then in the mixture. Shake off any excess coating. And place in the frying pan. Cook the chicken lightly on both sides in the pan.

      Remove from frying pan and place in a baking dish. Dribble a tablespoon of milk over the chicken and seal with aluminum foil. Bake at 350 degrees for about an hour. Remove the aluminum foil and continue baking at 400 degrees for about 10 more minutes. Serve immediately on a large platter.
