Make Apple and Chicken Stir-fry

Here is a recipe for apple chicken stir-fry. This is a great-tasting, healthy meal to cook.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • Vegetable oil
  • 2 or 3 boneless chicken breasts
  • 2 or 3 thinly sliced carrots
  • 1/2 cup of onion
  • 1 teaspoon crushed dried basil
  • 1 cup fresh Chinese peapods
  • 2 or 3 cups of cooked rice
  • 1 apple (baking variety)
  1. Step 1

    The rice is the first thing to start since it will take the longest to cook. White or brown rice both go nicely with this recipe.

  2. Step 2

    Prepare the onion by dicing it up. Slice up the carrots into thin slices. Dice up the chicken breast into small pieces.

  3. Step 3

    Take a good non-stick skillet and put a tablespoon of vegetable oil in it and place over medium to high heat on the stove. Stir fry the chicken until it is lightly browned and cooked.

  4. Step 4

    Once the chicken is cooked, remove it from the skillet and place it off to the side. Put another tablespoon and a half of vegetable oil in the skillet and set the heat at medium.

  5. Step 5

    Stir-fry the onion, carrots, and crushed dried basil together in the skillet on medium heat. Cook until the carrots begin to soften up. Then stir in a tablespoon of water along with the Chinese pea pods. Stir-fry for about 2 minutes.

  6. Step 6

    Remove mixture from heat.

  7. Step 7

    Slice up an apple to the core and stir in the apple slices. Use a baking variety apple such as Red Rome, Crispin, Jonagold, Golden Delicious, or McIntosh.

  8. Step 8

    Add back in the chicken and serve hot over the cooked white or brown rice. This recipe will make about 3-4 servings, depending on how many chicken breasts you use.

Tips & Warnings
  • Be sure to use a baking apple.
  • You can cook a great meal and only have to clean one pan for the stir fry and one pot for the rice.
  • This recipe can be made in as long as it takes you to cook your rice.
  • Don't cup up the apple until the end.
