Things You'll Need:
- Vegetable oil
- 2 or 3 boneless chicken breasts
- 2 or 3 thinly sliced carrots
- 1/2 cup of onion
- 1 teaspoon crushed dried basil
- 1 cup fresh Chinese peapods
- 2 or 3 cups of cooked rice
- 1 apple (baking variety)

Step 1
The rice is the first thing to start since it will take the longest to cook. White or brown rice both go nicely with this recipe.

Prepare the onion by dicing it up. Slice up the carrots into thin slices. Dice up the chicken breast into small pieces.

Take a good non-stick skillet and put a tablespoon of vegetable oil in it and place over medium to high heat on the stove. Stir fry the chicken until it is lightly browned and cooked.

Once the chicken is cooked, remove it from the skillet and place it off to the side. Put another tablespoon and a half of vegetable oil in the skillet and set the heat at medium.

Stir-fry the onion, carrots, and crushed dried basil together in the skillet on medium heat. Cook until the carrots begin to soften up. Then stir in a tablespoon of water along with the Chinese pea pods. Stir-fry for about 2 minutes.

Remove mixture from heat.

Slice up an apple to the core and stir in the apple slices. Use a baking variety apple such as Red Rome, Crispin, Jonagold, Golden Delicious, or McIntosh.

Add back in the chicken and serve hot over the cooked white or brown rice. This recipe will make about 3-4 servings, depending on how many chicken breasts you use.
