Things You'll Need:
- 3 pkgs cream cheese
- 1 cup sugar
- 3 eggs
- 1/2 cup sour cream
- 2 Tbsp. flour
- 1 to 2 tsp. vanilla

Step 1
Plan ahead and allow your cream cheese to come to room temparature. This is very important in providing you with the perfect firm yet creamy consistency. Never use cold cream cheese (or melted for that matter).

Preheat oven to 350 degrees. I like to use a ungreased spring form pan. It allows for a perfect release.

In a large bowl, fold together cream cheese, sugar, sour cream, flour, and vanilla. No not beat ingredients.

Add eggs last. Do not beat eggs, make sure to gently fold them into mixture. Do not overbeat. It is better to under-do-it than to over-do-it.

Pour into pan and bake in oven for approximately 45-55 minutes. You want to bake it until cheese cake is slightly browned. Do not overcook. Do not open the open at all during the cooking process. The escape of heat affects the consistency more than you realize. Use an oven light and view through window. If you feel you must open the door, a slight crack should be sufficient.

Once removed, allow the cheesecake to cool before releasing from the pan. Top with your choice of fruit or shaved chocolate if desired. This recipe will work with crust as well. Keep refrigerated. Enjoy!
