How to Make Crock pot Chicken, rice, and Vegetable Soup

Chicken and rice go together in any dish, it seems, so soup seems to be a natural choice for the two items.

Instructions

Things You'll Need:

  • crock pot, brown or wild rice, chicken or vegetable broth, your choice of vegetables, chicken breasts(already grilled or baked), assorted spices, fresh herbs
  1. Step 1

    First, fill the crock pot with broth 1/3 of the way full. Next, dice the already cooked chicken into cubes. I feel that grilled chicken (marinated or rubbed)would be the better choice here - it's tastier, and adds some extra spices. You make the choice on the marinade or rub. Put diced chicken into crock pot. At this point, start crock on high setting.
    You can also add some fresh herbs as basil, rosemary, or spearmint at this point also.

  2. Step 2

    Next, cook the rice. Wild rice can come in some exotic flavors, so if you want to be adventurous, go with the wild rice. Brown rice tends to be healthier, so your choice here. Prepare rice per package cooking instructions, then, after cooking, drain rice and add to the crock mix.

  3. Step 3

    Clean, dice, and chop vegetables at this point. The more colors the better! Squash,cucumber,zucchini,celery,peppers, or tomatoes work well - your call on how much. Add prepared vegetables to the mix. At this time, check your broth level to make sure you get the broth up to the 3/4 mark. Cover crock pot, and cook mix on high for up to 4 hours, then lo for the additional 2 - 3 hours.

Tips & Warnings
  • Potatoes can be a nice addition here - if you're adding them, you'll want to cube them fairly small - they will cook better.
