How to Make Crock pot Turkey - Vegetable Soup

Ground turkey, if it's lean, can be a healthy addition to any crock pot soup mix, and great for fall and winter!

Things You'll Need:

  • crock pot, lean ground turkey, your choice of vegetables, fresh herbs(your call),vegetable broth, V8
  1. Step 1

    First, drain any fat from ground turkey. If it's lean ground turkey, there should be very little fat. You have the option of searing, or cooking the ground turkey at this point - this can add a different flavor, and reduce cooking time if desired.If you do cook the turkey, you can add a meat seasoning such as Lawry's, and cinnamon(cinnamon really brings out a differen taste in ground turkey). Put ground turkey into crock pot, along with broth, and V8 juice. You'll want to fill the crock 1/3 of the way. Turn crock pot on high to start.

  2. Step 2

    Next, clean,dice, and slice vegetables. Carrots,celery,yellow squash,tomatoes, potatoes - all are fair game for the mix. Withe the potatoes, cubing them into bite -size bits works well for better cook - thru. Slicing carrots, celery, and squash into thin slices works well for those vegetables for cooking also. Add vegetables to the mix in crock, and also add more broth and V8,filling the crock pot to the 3/4 mark.

  3. Step 3

    Fresh herbs such as cilantro,rosemary, and basil work well here, so you can stir those into the mix at this point. Add a good meat seasoning and /or cinnamon if you haven't already done so in the beginning when you cooked the ground turkey. Cover crock pot, and cook on high for up to 4 hours. Then, turn down the pot to cook on low for the remaining 2 to 4 hours ( 6 -8 hours total cooking time).

Tips & Warnings
  • Be creative with whatever vegetables that you use - any garden vegetable can work well in a soup like this!
