How to make Shirley's Wonderful Bran Muffins

This recipe honors my mother in law Shirley, who always made these wonderful bran muffins. You can add raisins as she did, or leave out. Easy to make, and no mixer needed!

Instructions

Things You'll Need:

  • 1 cup all purpose flour
  • 1/2 cup sugar
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups 100 % Bran cereal
  • 1 cup milk
  • 1 egg
  • 1/4 cup canola oil
  • optional: 1/2 cup raisins
  • Muffin tin (12)
  1. Step 1

    Preheat oven to 400 degrees. Grease your muffin pan, or place muffin cups in the pan. Set aside.

  2. Step 2

    In a small bowl, combine 1 1/2 cups of all bran/100% bran cereal with l cup of milk (Can be skim, low fat or whole). Let this stand for about 6 minutes.

  3. Step 3

    In a large bowl, combine l cup flour, 1/2 cup sugar, 2 1/2 teaspoons of baking powder, 1/2 teaspoon of baking soda, and 1/2 teaspoon of salt. Whisk together. Set aside.

  4. Step 4

    In a separate bowl, whisk l egg, with 1/4 egg of canola oil. Take this mixture and add to the bran/milk mixture (after 6 minutes). Mix together.

  5. Step 5

    Add the flour mixture to the egg/oil/bran combination, and mix well.
    Add (fold in) 1/2 cup of raisins if you desire. Place in muffin cups until 3/4 full.

  6. Step 6

    Bake for approximately 20- 25 minutes. (In my electric oven, it usually takes 20 minutes). To be sure the muffins are done, check with toothpick to make sure it comes out clean and dry.
