How To Make Tuscan Onion Soup
Onion soup is a traditional soup that is served in many different regions all over the world. This Tuscan onion soup incorporates ingredients commonly found in Italian cooking, including fresh thyme, white wine and pancetta to make a soup that is flavorful, hearty and complex. With the accompanying Gruyere and cheddar cheese bread, Tuscan onion soup makes a great dinner on cold winter nights. Add this to my Recipe Box.
Things You'll Need
- 2 oz. chopped pancetta ham
- 4 white onions, sliced
- 4 cloves garlic, chopped
- 4 slices Italian bread
- 3 oz. Gruyere cheese
- 1 oz. cheddar cheese
- 4 tbsp. butter
- 2 tbsp. olive oil
- 3 1/2 cups chicken stock
- 1/4 cup dry white wine
- Kosher salt and cracked whole pepper to taste
- 1/4 tbsp. fresh thyme

Cook the pancetta in a large dry skillet for 3 minutes. Remove from the pan and set aside in a small bowl.

Add the olive oil and cook the onions and garlic for 5 to 7 minutes. Reduce the heat to low, and cook for an additional 10 minutes, or until onions caramelize.

Add the chicken stock and white wine and bring to the boil. Cover and simmer for 10 to 12 minutes.

Add the pancetta to the soup, and add the kosher salt and cracked pepper.

Toast slices of the Italian bread on a very hot grill or over the open flame on the stove, taking care not to burn the bread completely. Spread butter on top of the toasted slices and melt the shredded cheese on top of the bread.

Ladle the soup into bowls, and put a few toasted bread slices next to each bowl. Garnish with the chopped fresh thyme. Serve hot.
