How to Make Gluten-Free Sweet Potato Casserole
Gluten-free foods have been gaining popularity as more people develop an allergy to gluten. But many foods are naturally gluten-free. Sweet potatoes, for instance, are hearty, packed with beta carotene and fiber, and offer a hint of sweet. Versions of the traditional Thanksgiving sweet potato casserole are easy to make without gluten. Does this Spark an idea?
Things You'll Need
- Large bowl
- 6 large cooked sweet potatoes
- 1/4 cup softened butter
- 1 egg
- 4 Tbsp. brown sugar
- 1/2 tsp. vanilla
- 1/4 tsp. cinnamon
- 1/2 c. chopped pecans
- 1/2 c. orange juice
- 1 tsp. grated orange zest
- 1/2 c. pecan halves
- 1/2 tsp. salt
- 9-inch square pan or casserole dish

Preheat your oven to 350 degrees.

Mash the sweet potatoes in a large bowl.

Add all of the remaining ingredients except the pecans.

Spread the casserole into a 9-by-9 casserole dish. Sprinkle the pecans on top.

Bake the casserole for 40 to 45 minutes or until set.

Tips & Warnings
Make this dish a day ahead then store it unbaked and covered in the refrigerator. Add 5 to 7 minutes to the cook time when you bake it the next day.
Serves 8 to 10 people.
