Gluten-free foods have been gaining popularity as more people develop an allergy to gluten. But many foods are naturally gluten-free. Sweet potatoes, for instance, are hearty, packed with beta carotene and fiber, and offer a hint of sweet. Things You'll Need

  • Large bowl
  • 6 large cooked sweet potatoes
  • 1/4 cup softened butter
  • 1 egg
  • 4 Tbsp. brown sugar
  • 1/2 tsp. vanilla
  • 1/4 tsp. cinnamon
  • 1/2 c. chopped pecans
  • 1/2 c. orange juice
  • 1 tsp. grated orange zest
  • 1/2 c. pecan halves
  • 1/2 tsp. salt
  • 9-inch square pan or casserole dish

Instructions

      Preheat your oven to 350 degrees.

      Mash the sweet potatoes in a large bowl.

      Add all of the remaining ingredients except the pecans.

      Spread the casserole into a 9-by-9 casserole dish. Sprinkle the pecans on top.

      Bake the casserole for 40 to 45 minutes or until set.

Tips & Warnings

  • Make this dish a day ahead then store it unbaked and covered in the refrigerator. Add 5 to 7 minutes to the cook time when you bake it the next day.

  • Serves 8 to 10 people.
