Things You'll Need:
- Garlic
- hot pepper
- Dill seed
- okra
- Vinegar
- Water
- Canning salt
- Sugar
-
Step 1
Pickled okra is one of the easiest things to can. Of course, you will need a Water Bath Canner, and approximately 6 to 8 pint jars, depending on the amount of okra that you have to start with. Be sure that your jars are super clean, since that is very important in canning. You will also need the rings and lids to fit the jars.
-
Step 2
Step one. Since your jars are all nice and clean. You will need to add to each jar: 1 clove of garlic; at least one hot pepper, we used red and green hot peppers; 1/2 tsp. of dill seed; 1/2 tsp. canning salt; 1 tsp. sugar, i like to add just a little more sugar. Now your jars are ready for the okra. Be sure, that you have stemmed, and washed the okra. Very important: do not cut into the okra itself (your okra will come out slimy if you cut into it). Dry the okra, after you have washed it. You can lay the okra on a towel or paper towels, then dab the okra lightly to dry it off. Now, after it's dried off, put the okra into the jars, but do not pack the okra in.

Step 3
In a pot, put the 1 quart of vinegar, 1 c. water, and 1/2 c. canning salt. Let this come to a good boil, this is mainly to be sure that salt is dissolved good in there. Cut the heat off. Carefully, pour the hot liquid into each jar, up to within 1" of the top. Wipe the top of each jar, and add the lid and ring. Now process in a boiling water bath for 10 minutes.
