How to Make Beefy Breakfast Burritos

Beefy Breakfast Burritos are a delicious combination of roast beef, eggs, and cheese. They make an easy-to-eat hearty breakfast or a quick dinner.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 3 flour tortillas
  • 3 slices roast beef or left over steak, cut into small cubes
  • 1/4 cup shredded cheese
  • 1 medium potato, washed and pierced with a fork
  • 3 eggs
  • 2 tablespoons milk
  • 1 teaspoon butter
  • salt and pepper
  • toppings such as salsa, sour cream, chopped cilantro, and/or sliced avocado
  1. Step 1

    Sprinkle the flour tortillas with a few drops of water and wrap in aluminum foil. Heat in a 325 degree oven while the rest of the recipe is prepared.

  2. Step 2

    Place the washed and pierced potato in a microwave and cook for 3 to 4 minutes or until the potato is soft. Cut into small cubes and set aside.

  3. Step 3

    While the potato is cooking, beat the eggs, add the milk and season with salt and pepper. Heat butter in a small frying pan. Pour in egg mixture and cook until eggs are set, stirring occasionally.

  4. Step 4

    Place the beef cubes on a microwave safe plate and sprinkle with the cheese. Cook in a microwave for approximately 30 to 45 seconds or until the beef is warm and the cheese is melted.

  5. Step 5

    To assemble the burritos, top each tortilla with 1/3 of the cooked eggs, potato cubes and beef/cheese mixture. Roll burritos and serve with salsa, sour cream, cilantro, avocado or other toppings. Makes 3 burritos.
