London Broil is not actually a certain type of meat, but rather a way of preparing the meat. Usually, the meat used for preparing London Broil is flank steak or skirt steak. The name London Broil is a mystery. It doesn't come from London, because the term is unheard of there. Canada has a version of London Broil, prepared differently, but also using flank steak. The Canadianversion has the steak wrapped around a patty of ground meat. Does this Spark an idea?

  • Olive oil
  • Mojo criollo
  • Kosher salt
  • Flank steak
  • Cracked black pepper
  • Broiler pan
  • 1/2 pound butter
  • 1 large diced green pepper
  • Liquid smoke
  • Juice from 1/2 lime
  • 1 tbsp. oregano
  • 4 tsp. pressed garlic
  • 1 bottle cooking sherry
  • 1/2 pound fresh mushrooms, sliced
  • 4 English muffins

      Oil your broiler, and broil the meat until it is cooked. Make a mixture of 2 parts mojo criollo and 1 part olive oil. The amount of the mixture depends on the size of your flank steak. Use the mixture to marinate your flank steak in the refrigerator overnight.

      Remove the steak the next day, pat it dry with a clean kitchen towel and cover it in kosher salt and cracked black pepper. Heat your grill until it is very hot and all the charcoal is gray. Place your flank steak on the grill, and sear it for 4 minutes on each side.

      Put butter, diced green pepper, liquid smoke, lime juice, oregano, pressed garlic, cooking sherry and sliced fresh mushrooms in a skillet while your flank steak is still cooking. Cover the skillet and saute with the heat set to low for 15 minutes. This is the sauce to cover your smoked London Broil when it is done.

      Rub salt and pepper on the meat and slice it very thinly, almost shaved. Let the oven cool slightly and put your English muffins on a cookie sheet in the oven. Remove your muffins after 4 to 6 minutes of warming.

      Place your slices of meat onto the muffins and pour the sauteed sauce over the top. Serve with grilled vegetables and/or mashed potatoes.
