My family loves making crab cakes whenever we're at the beach on the Outer Banks of North Carolina. But even if you don't live where there's a source of fresh crab meat, you can make these tasty treats in a hurry. All the ingredients are easy to find at your grocery store, and you'll wind up with a quick snack or dinner with the addition of a salad.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1 Package English Muffins
  • 8 ounces (or more) lump crab meat
  • 2 cups shredded Swiss Cheese
  • 1/2 Stick softened butter
  • 1 Jar Kraft Old English Spread (softened)
  • Garlic to taste
  1. Step 1

    Preheat your oven or toaster oven to 350 degrees.

  2. Step 2

    Drain and rinse the crab meat, making sure it is not soggy.

  3. Step 3

    Grate the Swiss cheese through a fine grater, or use pre-shredded cheese from your local grocery store. I like Gruyere, as it's got a nice flavour to it.

  4. Step 4

    Make sure all the ingredients are are at room temperature, especially the butter and Kraft cheese. Fold together all the ingredients and layer on muffin halves.

  5. Step 5

    Bake the muffin halves at 350 degrees in the oven for 15 or 20 minutes, or until nicely browned.

Tips & Warnings
  • You can freeze the unbaked muffins flat on a cookie sheet, then wrap and keep them in the freezer to be baked fresh at any time.
