How to Make Crock pot Beef N' Bean Chili

Seems like chili recipes just go with crock pots - here's a quick and easy one for those fall and winter gatherings....

Instructions

Things You'll Need:

  • crock pot(any size), pinto beans, black beans, navy beans, V8 juice, beef for stews or beef tips,cilantro,Italian seasoning, red onion, chili mix, diced tomatoes, diced bell peppers
  1. Step 1

    Prepare crock pot by plugging in, and setting on lo to start, then adding V8 juice to fill half the crock. Any veggies that haven't been diced must be cleaned and diced at this point, then added to crock mix. Next, you'll want to clean the beef for stew, and beef tips, then add that to the mix. Turn the crock pot heat up at this point to high, and cover mix with crock lid.

  2. Step 2

    Next, add more V8 juice - not alot. Stir in the fresh cilantro, chili mix, and Italian seasoning. If your red onion didn't get cleaned, diced, and added to the mix, do it now.

  3. Step 3

    Last, pour beans, including juice, into mix, and stir. The bean juice is critical - this is why you measure your pours of V8 juice. What chili mix that you use is up to you - I like Carroll Shelby's for one, but there are plenty of mixes out there that will work. Cook mix on high for up to 6 -8 hours.

Tips & Warnings
  • Always use fresh veggies(especially the cilantro) when you can. Lean beef tips are a plus, because you will need to cut any fat off the beef before stewing, and the leaner the cut, the better the beef.
  • Always wash your hands in between steps after handling the raw beef - more disease spreads from the mishandling of raw meat products than what people think!
