How to Make Roast Turkey with Chestnut Bread Stuffing

Roast Turkey makes a meal special anytime of the year. It is a tradition for many families at Thanksgiving and Christmas to serve a beautiful and delicious oven roasted Turkey. This recipe is even more special as it has a mouth watering bread stuffing made with chestnuts. This is an old family recipe for you to try. It is delicious in roasting chickens too.

Instructions

Things You'll Need:

  • fresh or frozen (un-thawed) roasting turkey
  • 1/4 cup butter or margarine
  • 1 cup cooked, chopped chestnuts or unsalted fresh peanuts
  • 1/2 cup chopped celery
  • 1 1/2 qt. toasted bread crumbs
  • 2 tsp.salt
  • 1/8 tsp. black pepper
  • 1/4 tsp. nutmeg
  • 1/4 cup water
  • 1 egg, beaten

  1. Step 1

    Rinse turkey or chicken in cold water and pat dry; refrigerate while stuffing is prepared.

  2. Step 2

    Melt 1/4 cup butter in skillet. Add 1 cup cooked, chopped chestnuts or unsalted fresh peanuts and 1/2 cup chopped celery; saute until tender.

  3. Step 3

    Combine with 1 1/2 qt. toasted bread cubes, 1/8 tsp. black pepper, 1/4 tsp. nutmeg, 1/4 cup water, 1 egg,(beaten) and 1 tsp. salt.

    Rub turkey or chicken cavity with 1 tsp. salt; lightly fill neck and body cavities on turkey or chicken with stuffing.

  5. Step 5

    Close body cavity by pushing legs through skin flap near tail of bird. Fasten neck to back with skewer.

  6. Step 6

    Brush skin with melted butter; place bird, breast side up, on a rack in a shallow roasting pan.

  7. Step 7

    Roast, uncovered, in pre-heated (325 degree) oven for about 3-4 hours, depending on the size of your bird. Stuffing temperature needs to reach 165 degrees and turkey or chicken needs to be done, at least 168 degrees.

Tips & Warnings
  • Do not sear and do not add water during roasting period.
  • to make it truly an old southern roasted turkey you can brush with melted fat instead of melted butter.
  • In the old days for presentation you would twist wing tips and fasten "akimbo" style, bringing tips onto the back.
