How to Cook Beef Noodle Stir Fry With Bean Sprouts

It is a very easy and quick meal to make for family and friends and involves very minimal preparation. Things You'll Need
- Lean beef
- Bean sprouts
- Olive oil
- Chinese noodles
- Soya sauce
- Table or sea salt
- Black peppercorn
- Spring onions
- Sliced ginger
- Green peas
- Seafood (optional)
- Soya tofu (optional)
- Wok
- Large pot

Slice the lean red beef into long, thin slices and soak in a bowl of light soya sauce for about 10 minutes. Peel and dice the spring onions. Gently wash the bean sprouts under cold running water and remove all the husks and debris. Drain and pat dry on kitchen paper towels.

Heat up the wok and add a few tablespoons of olive oil. Next, add the thinly sliced beef strips to the wok and cook for several minutes until it is lightly browned on all sides. Remove the cooked meat and place on a plate.

Heat up a large pot of water to boiling point and add the Chinese noodles. Add a pinch of salt for taste. Allow the noodles to cook for 10 minutes over low heat. Stir the noodles occasionally to prevent it from sticking to the bottom of the pot.

Add the chopped spring onions and sliced ginger to the wok and stir for a few minutes for the flavor to mix with the meat juice extract and the olive oil. Next, add the bean sprouts and the green peas. Stir the mixture thoroughly for a couple of minutes before adding the lightly sautéed beef slices. Cover the wok with a lid to prevent the flavors from evaporating and allow the mixture to cook in the steam.

Remove the lid from the wok and add a few tablespoons of light soya sauce and some black peppercorn. Stir fry the beef mixture for an additional few minutes and scoop onto a serving dish. Serve with hot rice wine or Chinese antioxidant green tea or chrysanthemum tea.

Tips & Warnings
Replace the beef with seafood or soya tofu for a vegetarian dish.
Always wash the vegetables before you eat or cook them.
You can use any frying pan in place of a wok if you do not have one.
