How to Make a Pineapple Pecan Cake from Scratch

This cake, made from scratch is delicious. Great combination of pineapple, pecans and coconut.

Instructions
  1. Step 1

    Gather the ingredients for the cake:
    2 1/2 cups of self rising flour
    1/2 cup of vegetable shortening
    1 can of crushed pineapple
    2 cups of sugar
    1 teaspoon of vanilla extract
    3 eggs

  2. Step 2

    Mix all the cake ingredients in a large mixing bowl. Mix until blended well.

  3. Step 3

    Pour the cake batter into a lightly grease and floured 9 x 13 inch cake pan.

  4. Step 4

    Place in a preheated oven at 350 degrees Fahrenheit.

  5. Step 5

    Bake for about 25 to 30 minutes. When the cake is done it will be golden brown.

  6. Step 6

    While the cake is baking, gather the ingredients for the topping and prepare.
    2 cups of sugar
    1 1/2 cup of evaporated milk
    1 cup of coconut
    1 stick of margarine or butter
    1 cup of pecan pieces

  7. Step 7

    Bring the sugar, margarine and evaporated milk to a boil over medium heat.

  8. Step 8

    Once it is boiling, reduce the heat. Then simmer it for 10 minutes.

  9. Step 9

    Remove completely from heat. Now add the nuts and coconut.

  10. Step 10

    Pour over the cake while the topping and cake is warm.

  11. Step 11

    This cake taste best served warm. If your family is not large, you can cut this in individual servings and freeze.
