How to Make A Great Lattice Top Blueberry Pie

Of all pies, one of my favorite is the blueberry pie. Its not difficult to make and its extreamly tasty, especially if made from fresh blueberries. Below is a very good recipe on how to make a blueberry lattice top pie.

Instructions
  1. Step 1

    Ingredients:

    For The Dough:

    2 1/2 cups of flour
    1 teaspoon of salt
    1 1/2 tablespoons of white sugar
    1 cup of butter
    4 tablespoons of cold water

    For the Filling:

    3/4 cup white sugar
    3 tablespoons cornstarch
    1/4 teaspoon salt
    1/2 teaspoon ground cinnamon
    4 cups fresh blueberries
    1 teaspoon of lemon juice
    1 tablespoon of butter

  2. Step 2
     

    In a bowl combine the flour, salt and sugar. Put in the butter and mix it with a fork until its spread evenly and starts to kind of bead. Slowly add the cold water and continue to mix with a fork until it forms a dough. Now form the dough into a ball with your hands. Divide the dough into 2 balls and place them in a bowl and place it in the refrigerator for 30 minutes. Just a quick note, I make my own dough since its relatively easy to do and its much cheaper to make then buying premade dough.

    After the dough has been in the refrigerator for 30 minutes place one ball dough on a floured surface and roll the dough out to a 12 inch circle. Fold the dough in half and then transfer the dough into a 9 inch pie pan. Fold any overhanging dough underneath itself and pinch it for a nice look. Place the pie pan into the refrigerator to chill.

    Meanwhile take the second ball of dough out of the refrigerator and place it on a floured surface and roll the dough out to a rectangular shape that is about 9 inches long. Take a knife and cut it into strips of about 1/2 of an inch wide. You will need between 10 and 12 strips, depending how close you put the strips. Place them on a parchment lined baking sheet and then place it in the refrigerator to chill. Make the pie filling during this time.

  5. Step 5

    Preheat the oven to 425 degrees F.

    In another bowl mix the sugar, cornstarch, salt, and cinnamon first. Next add the blueberries and the lemon juice into the bowl and mix them thoroughly with the sugar mix.

    Remove the chilled pie pan from the refrigerator and place the blueberry mixture into the pie pan and dot it with the butter. Remove the pastry strips from the refrigerator and place them on the pie going one direction and then place them on the pie going the other direction so that you create a nice looking lattice top. Make sure you push the edges of the strips into the edge of the dough to connect them. Cut off any excess dough.

    Take one egg and lightly beat it. Brush the top of the dough with the beaten egg. This will give your dough a nice glaze to it when it is finished baking. I usually also take about a teaspoon of sugar and sprinkle it onto the dough that you have just brushed the egg onto. Now, place the pie into the preheated oven and bake the pie in the oven for 35 to 45 minutes, until the crust is a golden brown color. Enjoy your pie with a side of vanilla ice cream.
