How to Roast Pumpkin Seeds for a Snack Packed with Fiber

Not only are pumpkin seeds a fun snack around Halloween, but they are good fiber too. Fun and fiber; a combination too good to resist. After carving pumpkins, save the seeds, and have fresh roasted pumpkin seeds. Here are the directions.

Instructions
  1. Step 1

    Pick the seeds out of the pumpkin insides removed during carving.

  2. Step 2

    Wash the seeds in a large colander under cool running water.

  3. Step 3

    Put the seeds in a clean 16 ounce glass jar. An old applesauce or pickle jar works well because the opening of these jars are usually large. These jars are also easy to clean, and easy to get pumpkin seeds in and out of.

  4. Step 4

    Cover the seeds completely with water.

  5. Step 5

    Add 1 to 2 Tablespoons of salt to the water and seeds in the jar.

  6. Step 6

    Let the pumpkin seeds soak over night in the refrigerator.

  7. Step 7

    Rinse seeds in a colander under cool running water after soaking over night

  8. Step 8

    Spread seeds in a single layer across a large baking sheet.

  9. Step 9

    Bake pumpkin seeds in the oven on 250 degrees Fahrenheit.

  10. Step 10

    Check seeds every 5 minutes to see if they are golden brown. Total baking time could be from 15 to 30 minutes.

  11. Step 11

    Turn the pumpkin seeds over with a stainless steel spatula when the top side of the seeds are golden brown.

  12. Step 12

    Remove the seeds from the oven and let cool on the baking sheet when both sides of the seeds are golden brown.

  13. Step 13

    Enjoy your pumpkin seeds getting fiber the fun way!
