Spanish rice, also known as Mexican rice, is a flavorful Tex-Mex side dish. With hints of garlic, tomatoes and onions, this rice dish complements entrees such as tacos, enchiladas and fajitas. It is also served with steak, chicken or as a full entree. You don't have to be an expert on Spanish or Mexican cuisine to saute up a heaping plate of this amazing rice. Does this Spark an idea?

  • Olive oil
  • Long-grain white rice
  • Onion
  • Condensed chicken brother
  • Fresh diced tomatoes
  • Cumin
  • Minced garlic
  • Peas

Instructions

      Heat 2 tbsp. of olive oil in a large skillet on medium heat.

      Pour 1 cup of long-grain white rice and one onion, finely chopped, into the olive oil. Allow these ingredients to cook until the rice is brown and crispy and the onions are softened.

      Add 10 oz. of condensed chicken broth, 1 cup water, 1 cup fresh diced tomatoes, 1/2 tsp. cumin and one minced garlic clove to the rice skillet.

      Bring the rice mixture to a boil, and then reduce heat to low.

      Cover the skillet and cook for 10 to 15 minutes.

      Add 1 cup frozen peas to the cooked rice and cook for five minutes. Allow the dish to cool before serving.

Tips & Warnings

  • Substitute olive oil for vegetable oil if needed.

  • Replace diced tomatoes with tomato paste or salsa if desired.

  • Add chicken or steak to the completed dish to serve it as an entree.

  • Cooking with hot oil can be dangerous, so wear long sleeves or gloves to avoid burns from oil spatters.
