How to Make New Year’s Southern Black Eyed Peas and Sausage

In the South we wouldn’t dream of letting New Year’s Day go by without at least a spoonful of black eyed peas; eaten for good luck for every man, woman and child. If you make my black-eyed peas; you’ll want to eat them in large bowls with sweet corn bread until you can’t eat any more. These are so delicious; we always have to make at least a double batch to have enough for the neighbors. Warm, spicy and creamy: anything less would be “unSouthern”.

Instructions

Things You'll Need:

  • 2 packages frozen black eyed peas
  • 1 medium onion (yellow or white)
  • 1 can Campbell’s cream of mushroom soup
  • 1 can diced Italian tomatoes or tomatoes with green chilies
  • Large roll of Jimmy Dean or similar medium sausage
  • 1 tablespoon Garlic Salt
  • 1 tablespoon Chili Powder
  • 1 tablespoon Brown Sugar
  • 1 teaspoon salt
  • 1 teaspoon ground pepper
  1. Step 1

    Cook black-eyed peas per package directions. It’s best to use a big soup pot with a tight fitting lid if you have one available.

  2. Step 2

    In a medium skillet; brown sausage and onion together and drain grease. Add onion and sausage mixture to fresh cooked black eyed peas.

  3. Step 3

    Add in soup, tomatoes and all of the spices and mix thoroughly. Bring to a light boil, then reduce heat and simmer on/off all day long stirring occasionally. Transfer to a crock pot if you prefer.

Tips & Warnings
  • PictSweet Smokey Bacon Blackeye Peas with Snaps and Onions are a good choice
  • Really good served with corn bread and/or served over rice.
  • Top with cheese, cilantro or sour cream for extra goodness.
  • Feel free to throw in just about anything you like; including fresh garlic
