Things You'll Need:
- Potato (small)
- Yellow squash
- Zucchini
- ½ onion
- Ham
- Tomato (large)
- Knife (serrated)
- Frying pan (skillet)
- Cereal bowl
- Serving plates

Step 1
Select one small potato.

Wash the potatoWash the potato thoroughly. I use a brush to scrub the potato under running water.

SkilletPut a frying pan on the burner.

Step 4
Spray the pan with non-stick butter flavored cooking oil.

Turn the burner under the pan on to medium low heat.

Cut the potato into thin slices.

Cut the slices in half.

Frying potatoes.Put the potato slices into the pan. Spread them out so they cover the bottom of the pan.

Yellow squashWhile the potatoes are browning, wash the yellow squash.

Cube the squash until you have about 1 to 1 ½ cups. Keep an eye on the cooking potatoes to insure that they do not burn.

The first side of the potatoes should be brown by this time. Flip the potatoes when browned.

ZucchiniWhile the other side of the potatoes are browning, wash the zucchini.

Browned potatoesCube the zucchini until you have about 1 to 1 ½ cups. Again, keep an eye on the cooking potatoes to insure that they do not burn.

yellow squash and zucchiniOnce the potatoes are brown, dump the cubed yellow squash and zucchini into the pan on top of the potatoes.

MixStir, flip and turn with a spatula until the potatoes and squash are thoroughly mixed.

Cut up two large thick slices of cooked ham.

HamPut the ham in the frying pan.

Blend the ham inStir, flip and turn with a spatula until the ingredients are mixed.

SeasonSeason with lemon pepper and garlic powder. I shake it on until the contents of the pan are lightly covered.

Dice ½ of an onion.

Put the onion in the pan.

Stir, flip and turn with a spatula until all the ingredients are mixed.

TomatoWash one large tomato.

Cut the tomato up into a cereal bowl. A serrated knife makes tomato cutting easier.

Stir, flip and turn the contents of the skillet with a spatula until some of the ham is browned and the squash is soft.

Chopped tomatoAdd the diced tomato to the pan.

Stir, flip and turnStir, flip and turn with a spatula until all the ingredients are mixed.

Allow to simmer over medium low heat for 15 to 20 minutes. This allows it to cook down some and all the flavors to blend.

SimmerStir, flip and turn with a spatula frequently while simmering.

Place on a serving dish. Yields 3 to 4 servings. Options are to serve over rice, egg noodles or mashed potatoes. Sprinkle chow mein noodles over the top for a taste and texture variation.
