Step 1
Gather your cooking tools, plus the following ingredients to make the coleslaw and baked chicken cutlets.
-- For the Coleslaw --
* 1/2 head of a large cabbage
* 1 large carrot
* 1 small onion
* 2 stalks green onion, optional
* 1-1/2 cup mayonnaise
* 3 tablespoons sugar
* 3 tablespoons vinegar
* 1/2 teaspoon salt
-- For the Baked Chicken Cutlets --
* 4 pieces of chicken breast meat, boneless with skin
* Italian salad dressing
* 1 teaspoon freshly ground black pepper
* 2 cups corn flake crumbs
-- For Garnish --
* Lemon or lime wedges
* Sprigs of cilantro -
Step 2
For the baked chicken cutlets >>
Cut chicken breasts into 2"-wide strips. Pound the chicken strips until 1" in thickness. Add the Italian dressing and black pepper into a resealable bag, and then put in the cut chicken breast. Toss chicken in the bag for even coating. Marinate in the fridge for 1 hour. -
Step 3
For the Coleslaw >>
Make the coleslaw while the chicken is marinating. Shred finely the cabbage, onion and carrot. Combine the vegetables in a large glass bowl. In another bowl, blend together the vinegar, mayonnaise, sugar, and salt, then pour to shredded cabbage mixture. Make sure to blend well the ingredients. Cover and place in the refrigerator until needed. -
Step 4
Preheat oven to 375 degrees F. Grease a baking dish with cooking oil or line the dish with foil (no grease needed if using foil).

Coat both sides of the chicken cutlets in crumbs of corn flake. Arrange cutlets in single layer, on baking dish. Bake in a 350 degrees F oven for about 40 to 45 minutes or until golden brown.

Step 6
Remove baked chicken cutlets and place on serving plates with chilled coleslaw. Garnish with lemon/lime wedges and/or cilantro. Recipe for 4 persons.
※Additional serving suggestions: Serve with french fries, baked potato, steamed rice,or garlic bread/french bread.
