Things You'll Need:
- 2 cups sifted flour
- 3/4 cup white sugar
- 1/2 cup brown sugar
- 1 1/4 teaspoon baking soda
- 1 teaspoon salt
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1/2 tsp ground cloves
- 1/2 cup salad oil
- 1 cup milk
- 3 eggs
- 1/2 cup walnuts
- 1 1/2 cup grated carrot
- 1/2 cup raisins

Step 1
Sift flour and add spices and sugars in the above recipe to one bowl.

In another bowl beat eggs, add milk and beat together.

Add the sifted flour and spices to the eggs and milk. Gently fold in all the ingredients until the batter is well mixed. Then you can use an electric beater. Do not mix for a long time, just until slightly fluffy.

Prepare greased cake pans, use single layer, or two round cake pans for double layer. Muffin tins can also be used.

Cook at 375 for approximately 25 minutes. This depends on the size and depth of the pans you’re using. The carrot cake is done when it starts to pull away from the sides, is slightly golden on top and when a tooth pick or knife is inserted in the middle, it comes out clean.

Frost with cream cheese frosting, found with the cake mixes, which can be purchased at the store. To make carrot raisin muffins, instead of carrot cake, use a struesel topping or leave bare.
