Things You'll Need:
- 1 pound ground meat (browned/drained)
- 1/2 onion chopped
- 1 can stewed tomatoes
- 1 1/2-2 can water
- 1 16 oz can rotel tomatoes
- 1 12 oz can white corn
- 1 12 oz can hominy
- 1 16 oz can ranch style beans
- 1 16 oz can pinto beans
- 1 pkg taco seasoning
- 1 pkg. ranch dressing
-
Step 1
Brown ground beef in a skillet. Drain completely.
Peel and chop onion into bite sized pieces. -
Step 2
Mix all ingredients together in a large stock pot. Cook on medium low for 30 minutes.
-
Step 3
Serve with either Fritos. There are also a great variety of chips available that would be great with this. Try anything from blue corn chips to plain taco chips. Add shredded cheese and sour cream.
I also make cornbread muffins with this. To make it heartier, add leftover rotisserie chicken to the soup. Enjoy easy taco soup anytime you need a great last minute recipe!
