Making mexican enchiladas is fun and easy to do. In addition, they taste great and you can feed a number of people economically. Enchiladas can be made with beef, pork or chicken. In this article, the recipe calls for ground beef.

Instructions

Things You'll Need:

  • Ground beef
  • Onions
  • Packet of taco seasoning
  • Flour or corn tortillas
  • Shredded mexican cheese
  • Packet of enchilada sauce
  • Ground cumin
  1. Step 1

    To get started making beef enchiladas chop 1 medium sized onion into 1/4 inch pieces. If you like to see and taste the onion chop the pieces a little larger.

  2. Step 2

    Put the onion and 3 lbs. of ground beef in a saute pan. Brown the onions and beef. Add 1 packet of taco seasoning, 1 tbs cumin and 1 cup of water to the ground beef mixture. Cook the ground beef mixture until most of the liquid is gone. Turn off the heat.

  3. Step 3

    Prepare the packet of enchilada sauce according to the directions on the package.

  4. Step 4

    Heat oven to 350 degrees. Spray a baking dish or cookie sheet with Pam. Take a few spoonfuls of the enchilada sauce and spread an even layer in the bottom of the baking dish or cookie sheet.

  5. Step 5

    Start to assemble the enchiladas. Heat corn or flour tortillas in the microwave for 5 seconds to make them pliable and easy to handle.

  6. Step 6

    Fill tortillas with the beef mixture and cheese. Fold each side into the middle of the enchilada. Place the enchilada seam side down on the baking dish or cookie sheet. Cover all enchiladas with the enchilada sauce. Sprinkle them with cheese. Bake in the oven for 20 minutes.

Tips & Warnings
  • Serve enchiladas with green chilies, sour cream, salsa, tomatillo sauce or extra cheese, beans and rice.
  • You can add beans, diced tomatoes, chipotle or green chilies to the beef mixture.
