How to Make Cherry Tomato Bites

Cherry tomato bites are a great appetizer recipe for parties or even barbecues. They can be prepared well ahead of time and placed on a serving platter or tray at the last minute. Be creative and use different kinds of cheeses and herbs such as basil and mozzarella. Your family and friends are sure to love this simple recipe. Enjoy!

Instructions

Things You'll Need:

  • 16 cherry tomatoes
  • 1 lb. bacon
  • 1/2 cup mayonnaise
  • 3 Tbsp. Parmesan cheese, grated
  • 1 tsp. dried chopped parsley
  • Skillet
  • Bowl
  • Paper towels
  1. Step 1

    In the skillet, cook the bacon till crispy and then crumble it. Set aside for later use.

  2. Step 2

    Cut a thin slice off the top of each cherry tomato. Scoop out the pulp and seeds, discard the pulp and seeds. Place the tomatoes cut side down on a paper towel to drain.

  3. Step 3

    In the bowl, mix together the bacon, mayonnaise, Parmesan cheese, and parsley. Stir. Gently spoon into the cherry tomatoes. Place on a plate and put in the refrigerator to chill until ready to serve. Serve on a platter.
