How to Make Bean Burrito Casserole

I love this recipe. You can feed a big family for real cheap with bean burrito casserole. Kids love to kelp put together bean burrito casserole. Using rice and beans as the protein instead of meat is a great money saver in this recipe.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 2 cups cooked rice (white or brown)
  • 1 can re-fried beans
  • 2 cups cheddar cheese
  • 5 flour tortillas
  • 1 cup medium salsa
  • 2 cups frozen corn
  • 1/2 of one red onion chopped
  • 2 tomatoes diced
  • Sour cream to garnish
  1. Step 1

    Preheat the oven to 350 degrees.

  2. Step 2

    Place one flour tortilla in the bottom of a round casserole dish. Spread some of the beans over the tortilla. Then add some of the tomatoes, rice, onion and cheese. Place another flour tortilla over the top and spread some more of the beans over it. Add some of the salsa, corn and cheese. Repeat these two layers again. Leave one plain flour tortilla over the top.

  3. Step 3

    Cover and bake the bean burrito casserole for 20 minutes. Then cover the top with cheese and bake for another 5-10 minutes until the cheese has melted.

  4. Step 4

    Sprinkle a little diced tomato over the top of the bean burrito as a garnish and serve with some sour cream on the side.
