Things You'll Need:
- 2 teaspoons vegetable oil
- 1 pound ground beef
- 1 large onion, chopped
- 1 bulb of garlic, peeled and gloves sparated
- 8 dried red chili pepper, with seed
- 1 large green chili pepper with seed, chopped
- 2 cans of beef broth
- 1 can tomato soup
- 1 cup white button mushroom, thinly sliced
- 1 can (about 28 oz.) Pork and Beans
- 2 cups of water
- 1 package taco seasoning
- Freshly ground black pepper, to taste
- A handful of tortilla strips (tortilla topping), optional
- Mexican-blend shredded cheese, optional
- Sour cream, optional

Step 1
Gather your kitchen tools, and ingredients for the chipotlé beef and taco soup.

Bring to a boil 1 can tomato soup, 2 cans beef broth, 2 cups water, and green chili pepper. Turn heat down to low and stir in the taco seasoning. Cover, and simmer to keep warm.

Add first, the dried red chili peppers and garlic, with vegetable oil in a skillet over medium-high heat. When oil is hot and fragrant, discard the red chili and garlic.

Add brown beef and onion in the skillet, cook until onion is tender. Separate contents to drain off fat/grease.

Turn heat up to medium for the soup pot. Pour in a can of "pork and beans", cook for 3 minutes, stirring. Add the skillet beef. Cover, simmer for 15 minutes. Put in the mushrooms, cover and simmer for another 5 minutes. Your chipotlé beef and taco soup is ready.

Step 6
Ladle soup in a large bowl or individual serving bowls. Top with tortilla strips and/or (Mexican-blend shredded cheese/a tablespoonful of sour cream), optional. Each person can adjust to fit own taste with black ground pepper while at the table. Serve hot.
Makes 4 chipotlé beef and taco soup bowls.
※ Variations: Use equal amount of ground pork and shredded chicken breast meat called for on the Things You'll Need list, for chipotlé pork and taco soup/chipotlé chicken and taco soup.
