The warm delicious scent of a sweet and buttery pecan pie fills the air at Grandma's house. It is Thanksgiving, and this is the smell of fall food. Remembering that spread of food, and the array of flavors inspires this creation, the pecan pie cake. When I found this recipe in Southern Living magazine I thought it would be hard to make, but not counting shopping time it was mixed and baked in under an hour.

Instructions

Things You'll Need:

  • 3c Toasted chopped pecans
  • 1/2c Butter or margarine
  • 1/2c Shortening
  • 2 Sugar
  • 5 Eggs
  • 1 TBSP Vanilla extract
  • 2c All-purpose flour
  • 1 tsp Baking soda
  • 1c Buttermilk
  • 3/4c Dark corn syrup
  • Recipe pecan pie filling
  • Recipe pastry garnish.
  1. Step 1

    PECAN PIE FILLING AND GARNISH.
    Prepare the pecan pie filling or have chilled the filling you have purchased.

  2. Step 2

    COAT.
    3 nine inch pans generously with butter or margarine. Then sprinkle the pecans evenly on the bottom and sides.

  3. Step 3

    BEAT.
    Shortening and butter together until fluffy, slowly add sugar beating well. Then add the 5 yolks from the eggs slowly. Blend well after adding each. Last, beat in the vanilla.

  4. Step 4

    ADD.
    The half of the all-purpose flour, and the baking soda. Then add the buttermilk, beating at the lowest speed all the while. Add the other half of the flour the gradually add the last of the chopped pecans.

  5. Step 5

    BEAT.
    In a separate bowl the 5 egg whites. until peaks form stiffly. Add 1/3 of the whites into the batter. Gently fold the remaining egg whites in.

  6. Step 6

    POUR.
    The batter evenly into the tree prepared pans.

  7. Step 7

    BAKE.
    At 350 degrees for 25 minutes give or take depending on the true temperature of your oven. Allow to cool in the pans for 3 minutes. Invert the cakes onto wax paper topped wire racks. Evenly coat them with the corn syrup, then allow them to cool completely.

  8. Step 8

    SPREAD.
    Half of the pecan pie filling (which you can make or buy prepared from your local grocery)on the first cake layer with the pecan side up. Place the second cake layer on top of that one with the pecan side facing up. Coat the top of the second cake layer with the rest of the pecan pie filling and add the last cake layer pecan side up.

  9. Step 9

    DECORATE.
