Tired of the same old Cheesecakes?
Here's a recipe for a Berry-Lemon Cheesecake that's not only delicious, it's refreshing.

Instructions

Things You'll Need:

  • Graham crackers
  • Lemon Gelatin Mix
  • Pineapple
  • Strawberry preserves
  • Cottage cheese
  • Cream cheese
  • Butter
  • Sugar
  • Other berry of your choice
  1. Step 1

    You'll Need:25-30 Graham crackers, 1/4 cup sugar, 1/4 cup melted butter, 2 packages lemon gelatin mix (3 oz each), 2 containers cottage cheese (16 oz each), 2 packages cream cheese at room temp (8 oz each), 1 cup diced pineapple, 2 Tbs. strawberry preserves, melted. Optional other berries of your choice to top cheesecake

  2. Step 2

    Heat oven to 350 degrees. In blender pulse graham crackers and sugar 5 or 6 times or until the crumbs are fine. In medium bowl combine crumbs and melted butter and mix well. Press crumb mixture into a 8" pie pan. Bake for 8 minutes. Let the crust cool completely.

  3. Step 3

    In a 2 cup measure, combine 1 1/2 cups of boiling water into lemon gelatin mix. Stir 2 minutes or until gelatin is dissolved. In clean blender, puree the cottage cheese, pineapple and cream cheese for 2 minutes or until mixture is smooth. While blender is running,slowly pour warm gelatin into blender. Puree the mixture for for 1 minute or until smooth.

  4. Step 4

    Pour the cheesecake batter over the graham cracker crust. Put the melted strawberry preserves in a circle on top and using a wooden spoon swirl it around in a circle once. Chill the cheesecake for 3 hours or until set.
    Remove the cheesecake from the pan and place on a serving platter.
    Garnish top with your choice of berries and other fruit.

  5. Step 5

    Serve, Eat Up and Enjoy.

    Prep time 15-20 minutes. Total time 25-30 minutes plus chill time.
