Things You'll Need:
- 12-16 ounce can pineapple chunks
- large can diced tomatoes (16-28 ounces, or fresh diced tomatoes)
- large can plain tomato sauce (about 28-32 ounces)
- 1-2 large cloves minced garlic (more or less depending on how much you like garlic)
- 1 medium onion (diced or however you prefer)
- 1 medium mango, if desired (cubed or chopped)
- 1 tablespoon red pepper flakes
- 1 teaspoon hot sauce

Step 1
Prepare all fruits and vegetables and set aside. Open canned goods and have everything ready by the stove.

In a large saucepan or soup pan, sauté the onions and garlic over a low flame with a small amount of olive oil for about 10 minutes.
Add the canned or fresh diced tomatoes and stir well.
Add the pineapples and mangoes and cook for about 5 more minutes.
Slowly pour in the tomato sauce and remaining ingredients, including red pepper flakes and any spices you like to add. Simmer for about 10-15 minutes. -
Step 3
Serve warm.
* Serve over any type of pasta (from orzo to macaroni to angelhair... the list is endless!) or rice.
* Serve with pita crisps or toasted soft pita wedges for a unique dipping experience.
* Use as a pizza sauce. An interesting combination is pizza crust/dough topped with this sauce, cheese, and then mandarin oranges as a topping!
