How to Make a Egg, Sausage, Cheese, Pepper, Zucchini and Yellow Crookneck Squash Low Carbohydrate Breakfast

Feel like something different for breakfast? I like to utilize fresh vegetables straight out of my own garden when they are in season to make this delicious low carb breakfast.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • Sausage
  • Eggs
  • Cheese
  • Bell pepper
  • Zucchini
  • Yellow crookneck squash
  • Skillet(frying pan)
  • Spatula
  • Knife
  • Plate
  • Serving plate
  • Stove
  1. Step 1
    Skillet

    Place the frying pan on the stove's burner.

  2. Step 2
    Spray with non-stick cooking spray.

    Spray the pan with non-stick cooking oil.

  3. Step 3

    Turn the burner on to medium low heat. You can cook over higher heat but I like to cook most things rather slowly, I find that it is less likely to burn.

    Put the sausage in.

    Place the sausage in the frying pan. I am using 1/3 pound of sausage this morning but I am only planning on serving one to 2 people. Vary the amount of sausage according to number of servings and taste.

    Chop the sausage up as it cooks with the spatula.

    Dice the yellow crookneck squash into small pieces. I used approximately ¼ of a medium sized crookneck. You can vary this amount according to taste and servings.

    Check and turn your sausage, keep you eye on the cooking sausage as you dice the vegetables. I cut them up onto a plate on the counter right beside the stove.

    Cut pepper in two.

    Cut the bell pepper in two and scrap the insides out getting rid of all the seeds.

    Dice the bell pepper into small pieces. I used one whole small sized pepper. Again you can use as much or as little pepper as you want according to taste and servings.

    Check your sausage again.

    Dice the zucchini squash into small pieces. I used approximately ¼ of a medium sized zucchini. Again you can vary this amount according to taste and servings.

    Check your sausage again, make sure it is thoroughly cooked.

    Drain the excess grease off of your sausage. I use very lean sausage from a local meat counter so there is little excess grease.

    Add the fresh wholesome diced veggies.

    Add the vegetables to the sausage in the pan.

    Mix in the veggies.

    Stir with the spatula. Make certain that everything is well mixed.

    Flip and stir occasionally while cooking. Intervals of 30 to sixty seconds are acceptable.

    Cook the vegetables to your preference. In this recipe I prefer mine to be soft and lightly browned.

    Add eggs.

    Add the eggs to the cooking mixture. I added three eggs for one to two servings (just in case the sleeping member of the household wants breakfast when he wakes up). Use more or less eggs as needed.

    Stir the eggs in with the spatula, mix thoroughly.

    Continue to stir, flip and turn with the spatula until the eggs are cooked.

    Liberally top with shredded cheese. I use natural aged sharp cheddar for this recipe but feel free to use any cheese you desire.
