Things You'll Need:
- 1 cup of water
- 1/2 tsp. of vanilla extract
- 1 package of vanilla instant pudding & pie filling
- 3/4 cup of milk
- 4 eggs or Egg Beaters
- 1/2 cup of butter
- 3/4 cup of thawed cool whip
- 1 cup of all purpose flour

Step 1
Preheat your oven to 400 degrees. Meanwhile grab a bowl and mix pudding and 3/4 cup of milk until well blended. Place covered in refrigerator until it thickens. Then fold in 3/4 cup of cool whip, cover it and return to refrigerator.

In a medium sized saucepan bring 1 cup of water and 1/2 cup of butter to a boil, lower the heat to low. Slowly begin to stir in the cup of flour, keep stirring until the mixture starts forming a ball, about 1 minute. Now remove from heat add 1/2 tsp of vanilla extract and beat in the eggs, one by one.

Grab your ungreased baking sheet and drop a tbsp of the dough mixture onto it about 3 inches apart from each other. Bake for 35 to 45 minutes depending on your oven or until golden brown. Remove from the oven and let them cool off.

Cut the tops from each puff. Now the following steps are easy enough for the kids to do. This will keep them busy while you clean up and give them self confidence when they see what they can do. Scoop out the dough from inside. Get your pudding mix out of the fridge and fill each puff, cover with the top and place a tablespoon of coolwhip on top before serving.

If you like eclairs like I do, spread some milk chocolate cake frosting on each top. Tastes just like a mini eclair. Enjoy!
