Things You'll Need:
- Scallops
- Butter
- Mustard
- Cayenne
- Tabasco
- Salt
- Parsley
- Onion juice
- Buttered crumbs
-
Step 1
Put 3/4 cup of water into a medium saucepan, add 1 1/2 pounds of scallops and heat to the boiling point. Drain but save the liquid; wait until the scallops have cooled down a little and then chop the scallops coarsely.
-
Step 2
In another bowl, Cream together 1 1/2 tablespoons mustard, and three tablespoons of butter and add 1/2 teaspoon salt and a dash of cayenne pepper and mix. Add the 3/4 cup of saved liquid, put in few drops of Tabasco, one teaspoon of minced parsley, and 1/2 teaspoon onion juice and mix well.
-
Step 3
Combine this mixture with the scallops and let it stand for one hour to marinate it. Place the scallop mixture into a shallow baking dish or into scallop shells. Sprinkle butter crumbs over all and bake in a hot oven (375 F.) for about twenty minutes (but no longer). Serve as soon as possible. This dish will serve about six people.
