Things You'll Need:
- 1 small sugar or pie pumpkin
- Food processor or blender
- Spoon
- Foil covered baking sheet
- Knife

Step 1
Preheat oven to 350 degrees. Use a small sugar or pie pumpkin. Stem and quarter the pumpkin, then remove all seeds. Discard seeds, or save to make pumpkin seeds. Cover a baking sheet with aluminum foil.

Step 2
On a sheet of aluminum foil wrapped over a baking sheet, place the piece of pumpkin SKIN SIDE UP. Bake at 350 degrees until pumpkin is tender. (About 45 minutes). Remove the pan from the oven and let pumpkin pieces cool.

Step 3
With a spoon, scrape the flesh from the skin of each pumpkin piece and place into a food processor or blender. Puree the pieces until smooth.

Step 4
Place the puree into single cup portions in freezer bags and label with the date. Puree can be frozen for up to 3 months and one pound of pumpkin=1 cup of puree.
Use in place of pumpkin puree in recipes.
