Things You'll Need:
- 3 cups cooked rice
- 1/2 cup frozen peas, thawed
- 3 tbsp diced carrot
- 2 beaten eggs
- 1/2 cup diced onion
- 1 1/2 tbsp butter
- 1 1/2 tbsp soy sauce
- salt and pepper to taste

This recipe is an wonderful way to use leftover rice. However, if you are beginning from scratch, cook rice according to package instructions and transfer to a bowl and place in the refrigerator, allowing it to cool while you prepare other ingredients. If using leftovers, simply transfer rice to a medium-sized bowl.

Scramble eggs in a small pan over medium heat. Separate eggs into small bits while scrambling.

Add peas, grated carrot, scrambled egg and diced onion to the bowl of rice. Toss ingredients together.

Melt butter in a large pan over medium high heat. When butter has completely melted, dump the bowl of rice and other ingredients into the pan and add soy sauce and salt and pepper to taste. Cook rice for 6-8 minutes, stirring and tossing occasionally.
