How to Make a Strawberry Cobbler
When strawberries are in season (June through August), nothing compares to their juicy sweetness at the end of a meal. Though the origin of the word cobbler is unknown, Irma Rombauer, author of "The Joy of Cooking," says, "We have always liked to think that it might once have referred to a cook cobbling or patching together the ingredients for this casually crafted dessert." Things You'll Need
- Two medium-sized mixing bowls
- Two spoons
- Four-cup and two-cup measuring cups
- Four cups of hulled and quartered strawberries
- 1/2 cup sugar
- 2 1/3 cups instant pancake or baking mix, (such as Jiffy or Bisquick)
- 3 tablespoons sugar
- 3 tablespoons melted buttter
- 1/2 cup milk, half-n-half or heavy cream
- Greased 4-quart casserole dish with lid

Preheat your oven to 350 degrees.
Measure 4 cups of fresh strawberries. Wash by rinsing with cold water. Remove the green hulls with a paring knife. Cut each strawberry into four pieces. Add to mixing bowl. Add 1/4 cup sugar and mix gently with berries. Put the bowl in the refrigerator; the strawberries and sugar will produce more juice. -

Take the second mixing bowl and add 2 1/3 cups baking mix. Add the 3 tablespoons melted butter, 3 tablespoons of sugar and 1/2 cup milk, heavy cream or half-n-half. Mix well with a spoon.

Remove the strawberry mixture from the refrigerator and empty into the greased casserole dish. Using a large spoon, dollop the biscuit mixture evenly over the top of the berries, either in one layer or golf-ball size pieces of dough. Put the lid on the casserole dish or cover the dish with aluminum foil.

Place the covered cobbler on the center rack of the oven and bake for 40 minutes. Remove the foil or lid from the casserole and let bake for another 10 minutes. When the cobbler is ready, the topping should be lightly browned and the strawberry juices should be bubbling up around the edges and through the center.

Remove the cobbler from the oven and let cool for a half-hour before serving.

Tips & Warnings
Pop the cobbler in the oven as you sit down to your meal; it will be ready to remove from the oven and cooled by the time you've cleared the dinner dishes. Serve with half-n-half, whipped cream or vanilla ice cream on top. If you want a quicker version of this dessert, omit the biscuit topping and prepare it using pre-made pie crust, laid on top of the berries, baked without the cover for 50 minutes. Dust with a little sugar.
Do not use frozen berries, because they will be mushy. The half-hour cooling time is essential, because the strawberry filling will be very hot.
