Things You'll Need:
- 1-2 garlic clove
- anchovy paste or the real ones cut in small pieces
- Italian seasoning
- sugar
- white wine
- olive oil
- frozen green peppers or the fresh ones
- 1/4 onion
- carrots diced small if you like and some ground meat that you brown ahead of time
-
Step 1
Peel and grate garlic or chop very fine.(1 for small batch or 2 or 3 for a big batch
Chop up the anchovies if you use the kind from the jar or use about a tablespoon of the paste .
You need about 3 or 4 anchovies for a big batch and 2 for a small batch .
Chop the onion and green or red pepper very fine . -
Step 2
Put 2 -3 tablespoons of olive oil in the sauce pan on medium heat and add the garlic and anchovies . Let cook just a little bit then add the peppers and onions and sauté them as well . Add a 1/4 cup of white wine . A little more for a bigger batch . Let the wine cook down some and then pour in one or two 8 oz cans of tomato sauce and then bring to a boil again and then turn it on low and let it simmer about 15 -20 minutes
-
Step 3
Add a tablespoon of sugar and a tablespoon of Italian seasoning. That is the basic sauce I use instead of the store kind and this way I know what goes in it . Taste it and if you want, you can add a little more sugar or spices.
