Steak fajitas are a delicious way to spice up your weeknight dinners and add a little southwestern flair to your life. They are quick and easy, and go from prep to table in under 30 minutes.

Difficulty: Moderately Easy
Instructions
  1. Step 1

    Slice 1 lb of skirt steak into 1 inch strips. Marinade in the juice of 1 lime, a teaspoon of cumin, 2 cloves finely chopped garlic, a few tablespoons of olive oil, and some crushed red pepper, salt, smoked paprika, and a finely chopped jalapeno pepper. Add the spicy ingredients to whatever level you like the heat at. Marinade from 2 hours to overnight.

  2. Step 2

    Slice 2 bell peppers into strips. Use different colors to make the meal more visually interesting. Slice 1/2 of a red onion. Add the steak to a skillet with a little olive oil. Sauté over medium heat. Add peppers and onions when meat is nearly done. Be careful not to overcook vegetables. They are best when a little crunchy still.

  3. Step 3

    Warm tortillas, and serve meat with cheese and fresh pico de gallo, which you can purchase in most delis or speciality stores. Top with fresh cilantro.
