How to Make Cordial

Basic cordials are pure grain alcohol bottled with fruit, spices and sugar and allowed to age. The fruit and spices infuse the alcohol with flavor to make a sweet liqueur. Brandy is traditionally the base alcohol for cordials, but vodka is also popular and any pure grain alcohol can be used. Mild fruits such as apples, pears and peaches pair well with brandy, along with cloves and nutmeg as the spices. Citrus fruits and ginger go very well with brandy, also. Most berries can be used for either. Choose your favorite fruits and pair them with the most appropriate alcohol and spices. Does this Spark an idea?

Things You'll Need

  • Glass quart container
  • ½ to 1 lb. fruit
  • 1 cup sugar
  • 1 qt. vodka or brandy
  • Spices
  • Colander
  • Cheesecloth
  • Several glass bottles or jars

Instructions

      Cut the fruit into nickel-sized pieces. Pour sugar and spices into the bottom of the container and layer the fruit on top.

      Fill the container, but do not pack or crush the fruit.

      Pour in enough alcohol to cover the fruit completely. Cap the container tightly and store in a cool, dark place for 4 to 6 weeks. Shake it gently about once a week.

      Strain the cordial through the colander and then through the cheesecloth to remove all fruit pieces.

      Store the cordial in glass bottles or jars.
