How to Grow Lactobacillus Bulgaricus
Lactobacillus bulgaricus was discovered in 1905 by a Bulgarian doctor name Stamen Grigorov. It is found in several fermented products, and is one of a number of bacteria used in making yogurt. It has a number of benefits, including helping lower cholesterol, boosting the immune system and improving the digestive system. It can be used as a yogurt starter culture. L. Things You'll Need
- ½ gallon milk
- 2 to 3 tbsp. plain yogurt containing L. Bulgaricus
- 8-qt. pot
- 4-qt. pot
- Plastic spoon (sterilized)
- Dial thermometer (sterilized)
- Heating pad (optional)

Put the smaller pot inside the larger one. Fill the larger pot halfway with water.

Pour all the milk into the smaller pot. Place the thermometer into the milk and clip it to the side of the pot.

Boil the milk, stirring constantly until the temperature reaches 185 degrees F.

Place the pan of milk in cold water and allow milk to cool to 110 degrees F. Stir regularly.

Add your L. Bulgaricus starter culture.

Stir the milk and cover the pot. Turn on the heating pad and place the pot of milk on top. (If you don't have a heating pad, leave the pot of milk in a warm place.)

Check the milk with a spoon after seven hours. By now it should have curdled. Stir vigorously to mix.

Pour into a container and allow to chill for around 10 hours, then serve.

Tips & Warnings
The quantity of milk you use will produce the same amount of yogurt. You don't have to use cow's milk--you can replace it with goat's milk, soy milk or rice milk. You will need to use plain yogurt containing L. Bulgaricus for the starter batch; for subsequent batches you can use a starter from your own yogurt Use a plastic spoon because it's easy to sterilize.
