Falafel is SO good and SO good for you. Many people try making it but it falls apart in the pan and they can't figure out why. It's a simple remedy - so simple, I will post a great falafel recipe just so there is enough words in the post. The "secret" also works with falafel mix or any traditional falafel recipe.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1 (15 ounce) can chickpeas, drained
  • 1 medium onion, finely chopped
  • 1 tablespoon minced garlic
  • 1 tablespoons fresh parsley, finely chopped
  • 1 teaspoon coriander
  • 3/4 teaspoon cumin
  • 1/2 teaspoon salt
  • 2 tablespoons flour
  • vegetable oil (for frying)
  1. Step 1

Falafel is a middle eastern food that is made from chickpeas (garbanzo beans) It is high in fiber and very filling.

Combine chickpeas, garlic, onion, coriander, cumin, salt in medium bowl. Add flour and mix well. Mash in chickpeas and mix well. It should be a thick paste. You can also process all of it in a food processor.

  2. Step 2

Form mixture into small (1") balls and slightly flatten them. Place in HOT oil and fry until golden / crisp, turn and fry the other side until golden

  3. Step 3

Serve in warmed pita bread with hummus and lettuce - along with tahini sauce (if you like it)

The secret is to use HOT oil to fry your falafel. Not smoking hot but very hot. If the oil is any colder even minimally, the falafel will fall apart and end up being nothing but crumbs at the bottom of the oil.

I personally like the Fantastic Foods falafel mix. Just add water and you're ready to fry in 15 minutes. I also use their hummus mix (warm water and olive oil) Dinner can be in 20 minutes and using a mix, you can make small amounts.
