Things You'll Need:
- 7 average sized sweet potatoes
- 2 1/2 cups cut up ham
- 1 large can pineapple chunks, drained, reserving juice
- 1/3 cup pimento strips
- 3 Tbsp. Butter
- Heavy Cream
- 3 Tbsp. Brown Sugar
- 1 Tbsp. Cornstarch
- 2 Tbsp Apple Cider vinegar
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1/4 tsp. ground allspice

Step 1
Boil sweet potatoes in their skins for 35 minutes. Skin and mash with 1 Tbsp. of butter, allspice, salt, pepper and enough cream to make them rich.

Preheat oven to 400 degrees.

In bowl, mix together, pineapple juice, apple cider vinegar, brown sugar and cornstarch. Whisk until smooth.

Over medium heat, in a heavy skillet, melt remaining butter. Saute ham, stirring constantly, until golden. Add pimento and pineapple chunks. Still stirring, cook until golden. Add cornstarch mixture, stir constantly until thickened.

Pour ham mixture into buttered baking dish. Spoon mashed sweet potatoes over top. Bake 25 minutes or until golden and bubbling hot.
