These light, fluffy pancakes will be a hit at breakfast if you or your children have egg or milk allergies or if you are vegan. They are easy and quick to make and you can add fruit as a topping or to the batter. Use fruit you and your children enjoy and top with real maple syrup for added sweetness. Does this Spark an idea?

Things You'll Need

  • 2 cups flour
  • 4 tsp baking powder
  • 1/2 tsp salt
  • 2 tbsp sugar
  • 1/2 tsp vanilla extract
  • 3 tbsp oil
  • 1 1/2 to 2 cups water
  • Bowl
  • Fork
  • Spoon
  • Griddle

Instructions

      Heat griddle over medium-high heat. Combine flour, baking powder, salt and sugar into a medium bowl. Mix dry ingredients with a fork or spoon.

      Add the vanilla extract and the oil.

      Add the water to the batter until the batter is the right consistency. Add 1 1/2 cups first and then gradually add a little more at a time. Make sure the batter is not too thin or too thick.

      Add in fruit you and your kids like. Stir gently.

      Spoon the batter onto a heated griddle. When batter begins to bubble, flip pancakes carefully. Remove from griddle when pancakes are golden.

Tips & Warnings

  • Recipe can be halved or doubled very easily.
