How to Make Low Fat Guacamole

While guacamole, when prepared with fresh ingredients isn't a particularly unhealthy treat, it is relatively high fat. Here's a recipe that you can use to lower the fat content in your guacamole without losing any flavor. And since it will reduce the amount of expensive avocado you use, you should be able to save some cash in the process as well.

Instructions

Things You'll Need:

  • Blender or Food processor
  • 3 avocados
  • 1 small zucchini
  • 1 white onion
  • 3 cloves of garlic
  • 1 jalapeno
  • 1 green pepper
  • 2 medium sized tomatoes (think between baseball size or smaller)
  • cilantro to taste.
  • 1 lime
  1. Step 1

    Wash your hands and prepare your workspace, make sure counters are clean and set out all ingredients and necessary tools.

  2. Step 2

    Chop up zucchini in small chunks. Blend.

  3. Step 3

    Peel garlic and add to the blended zucchini. Blend

  4. Step 4

    Peel and pit your avocados. Mash with a fork.

  5. Step 5

    Pour blended zucchini and garlic into a large mixing bowl. Add avocado, mix ingredients together and whip mixture until fluffy.

  6. Step 6

    Wash onions, jalapeno, green peppers, and tomatoes. Chop onions, jalapeno, green peppers, and tomatoes. Mix into avocado-zucchini-garlic mixture.

  7. Step 7

    Remove cilantro stems, finely chop, and add to taste. Add salt and lime to taste.

  8. Step 8

    Serve with tortilla chips, raw veggies, salad or with your favorite Mexican meal. ¡Buen provecho!

Tips & Warnings
  • If you want mild guacamole, roast your garlic before blending, and leave out the jalapeno.
  • If you want super spicy guacamole, use more garlic and jalapenos, or substitute habañeros for jalapenos.
  • to make regular fat guacamole, use all avocados and no zucchini (you will need at least one more avocado)
  • You can also use fresh or frozen peas (a cup) instead of raw zucchini in this recipe.
  • cilantro is a spice that people generally love or hate. When in doubt, use less.
  • Be careful with adding salt if people are going to eat your guacamole with chips, as the chips themselves tend to have a lot of salt already.
  • Blend the zucchini so it doesn't have any chunks, and no one will be the wiser that you are serving lower calorie, lower cost guacamole.
